Description This is Baiani's most intense bar. Its high percentage pays homage to the "88 butterfly," also known as the Diaethria Clymena, native of the Atlantic Rainforest. It landed on the makers' drying tunnel just as they were discussing the desire of making a bar with higher content of cacao. It was only in 2019 that they were finally able to get a cocoa blend with enough complexity and sweetness that they could make a delicious high-percentage bar. This blend carries notes of pure cacao, chocolate, dried fruit, and bananas, a result which inspired them to keep on searching for new recipes, even when it seems difficult.
